Hive Top Chef! | Delicious Lemon Pie.
Greetings my friends, I hope you're all doing well and enjoying your weekend. Today I'm joining the contest offered by the @qurator team, Qurator's: Hive Top Chef! | Pies. This week we have to share a pie recipe. I think all the pies I've tried so far are exquisite, my favorite being passion fruit. But for this occasion, I wanted to share the recipe for a lemon pie, which is also exquisite. The citrus flavors mixed with the sweet flavors result in delicious desserts. To make this dessert, you need few ingredients and it's very easy to make. Let's start with the step-by-step instructions.
Delicious Lemon Pie.

Ingredients:

250g Maria cookies, approximately 8 or 9 packages.
100g melted butter.
1/2 teaspoon ground cinnamon.
For the Lemon Cream:
3 egg yolks.
3/4 cup lemon juice.
300g condensed milk.
For the Swiss Meringue
3 egg whites.
1 1/3 cups sugar.
1/2 tablespoon of vanilla.
1 teaspoon of lemon juice.
Lemon zest.
Process:
1- First, process the cookies. Place them in a bowl, add the melted butter and cinnamon, and mix well until everything is well combined.



2- In a springform pan, line the bottom with baking paper and add the cookies. Press firmly until firm, then bake in the preheated oven for 10 minutes. After the time has elapsed, remove from the oven and set aside while you make the lemon curd.

3- To make the lemon curd, in a bowl, add the condensed milk and egg yolks, beat, and then add the lemon juice. Continue mixing until everything is well combined.



4- Add the mixture to the pan with the cookie crust and bake for 25 minutes. Once the time is up, remove from the oven and let cool. Refrigerate for approximately 2 to 3 hours.

5- To prepare the Swiss meringue, add the leftover egg whites from when I separated the yolks to the mixer bowl and add the sugar. Mix, then place in a double boiler, stirring constantly, until the sugar has completely dissolved. You can take a little of the mixture with your fingers. If you don't feel any sugar, it's ready to be whipped.



6- Beat in the mixer at medium-high speed. When it begins to thicken, add the lemon zest and half a teaspoon of juice. Then add the vanilla. Continue beating for 8 to 10 minutes, until it is very thick and forms stiff peaks.


7- When the meringue is ready, remove the pie from the refrigerator and decorate it however you like. Finally, add a little lemon zest, and that's it! Unmold and enjoy the flavor and texture of this delicious pie.
