Banana Loaf: The Recipe That Will Save Your Overripe Bananas | LOH #257

This week’s question by @marivic10 is really exciting! 😍 I’m so happy to share with you the first dessert recipe I learned from our Baking Class. Even though we were first taught how to knead bread, the very first sweet recipe we prepared was Banana Loaf.

Do you have overripe bananas at home that you can't use up? Don't throw them away! 😉 These bananas are the perfect ingredient for our Banana Loaf. It's so simple to make, and the ingredients are easy to find in the kitchen or buy at the grocery store. So, let's start baking! ✨

This recipe will yield two 8" x 4" loaf pans. We don’t have loaf pan at home, so I just used an Aluminum Tray Foil Pan that I placed in a deep baking pan.


INGREDIENTS:

  • 2 cups All Purpose Flour
  • 1 tsp. Baking Soda
  • ¼ tsp. Salt
  • ½ cup Melted Butter
  • ¾ cup Brown Sugar
  • 2 pcs. Eggs
  • 2 cups Mashed Banana (Overripe)
  • ¼ cup Evaporated Milk
  • Chocolate Chips (optional)

PROCEDURE:

Step 1:
Prepare the Bananas: First, peel the overripe bananas and mash them. You can use a spoon, but if you have a hand mixer, the process will be faster.

Step 2:
Combine the Dry Ingredients: In a large bowl, combine the All-Purpose Flour, Baking Soda, and Salt. Mix well.

Step 3:
Melt the butter. You can melt it over a double boiler or use the microwave for faster results.

Step 4:
Beat the eggs.

Step 5:
Mix the Wet Ingredients: In a separate bowl, combine the mashed bananas, melted butter, beaten eggs, brown sugar, and milk. Mix well until everything is combined.

Step 6:
Combine Everything: Stir the banana mixture into the flour mixture. Mix well.

Step 7:
Prepare the Pan: Lightly grease the pan you will be using to hold the mixture. Pour the mixture in and shake it slightly to release any air bubbles.


Step 8:
Bake in the oven for 12 minutes at 180 degrees Celsius or 350 degrees Fahrenheit.

Check for doneness:
To check if the bottom is cooked through, insert a toothpick. If there is still a bit of wet mixture left on the toothpick, the bottom is not cooked yet and needs more time.

Add Flavor (Optional):
If you want extra flavor, you can mix chocolate chips into the mixture, or just sprinkle some chips on top as toppings. It’s up to you 😉


And voila! We have a delicious Banana Loaf! 😍

This simple recipe is truly a banana saver! ✨ It's amazing that something we think is rotten, like an overripe banana, can actually be useful and very delicious 💖 When we have overripe bananas at home, my mom always asks me to bake this. That means no more wasting overripe bananas at home! 😊

Banana LOAF is my daughter favorite, this is one of the first to check when I am from the supermarket doing grocery shopping.

Hello, very nice day.
It looks really good, I'm going to see if I can make it.
I use the ripe banana to make a juice rich in potassium and other minerals, I use it when I feel very exhausted from exercise.
