Hope your week has been amazing and its almost another weekend just by the conner for that rest we desire so much.

Today I will be sharing photos from my kitchen and this time its from a delicious porridge yam I made for lunch 🥗 some weeks back. This farmers porridge dish as we call it is one staple food 🥘 in my country.

What makes this dish unique is because yam 🍠 is a seasonal root tuber food which everyone in my tribe tries to enjoy once we have yam in season because once the yam season wears out, farmers 👨‍🌾 will begin to plant 🌱 back the yam into the ground for a new season that will take months to be harvested.

Yam 🍠 is a staple food and very versatile in the kitchen. We can enjoyed this tuber by just boiling and pairing it with fried eggs 🍳. We can also fry the yam with vegetable oil and pair it with spicy 🌶 tomatoes 🍅 sauce , but I love to enjoy yam in porridge and vegetable recipe as it makes the dish tender and savory. Here above is the yam boiling before adding spices and vegetables. Then a touch of tomatoes 🍅 paste for reddishness.

In the next few months, farmers 👨‍🌾 will begin to take back the already hard yam 🍠 into the ground for cultivation for next season of harvest. This very dish I share with you will keep its memory until another season comes.
