Egg soup or "Chulco de huevos" EN/ES

Ecuadorian egg soup or chulco de huevo was eaten for breakfast on the haciendas of the Ecuadorian highlands, where landowners preferred it to potato stew. Egg soup was also prepared when travelers arrived late at night, tired and hungry, since it was difficult to travel on the bridle paths; modernity brought the railroad and, a few years later, paved roads.

Ingredients

2 poached eggs per person
1 liter of milk
1 long white onion, chopped
1 pinch of salt
1 pinch of pepper
1 pinch of oregano

The long white onion, fresh cheese, salt, pepper, oregano, eggs, and milk were taken out of the cupboard. A medium pot was placed on the stove, a little achiote was added, and the finely chopped long onion was fried.

Then pour in the milk, salt, pepper, and oregano. While the milk is boiling, crack the eggs one by one into a soup ladle and add them to the boiling soup to poach them. Once cooked, place them in a soup bowl on top of the hot soup, then add the other one and garnish with Parmesan cheese and chopped parsley.

CHULCO DE HUEVOS

El caldillo de huevo o chulco de huevo ecuatoriano se comía en las haciendas de la Sierra ecuatoriana en el desayuno, cuando los terratenientes lo preferían al locro de papas . El caldillo de huevos también se preparaba cuando los viajeros llegaban a altas horas de la noche, cansados y hambrientos, puesto que era duro ir por los caminos de herradura; la modernidad trajo el ferrocarril y, algunos años después, las carreteras lastradas.

Ingredientes

2 huevos pochados por persona
1 litro de leche
1 cebolla blanca larga picada
1 pizca de sal
1 pizca de pimienta
1 pizca de orégano

Se sacaba de la alacena la cebolla blanca larga, el queso fresco, sal, pimienta, orégano, huevos y leche. Puesta la olla mediana al fuego, se pone un poco de achiote y se fríe la cebolla larga picada finamente.

Después se vierte la leche, sal, pimienta con orégano y mientras se hierve la leche, se parten los huevos de uno en uno sobre un cucharón sopero y se lo introduce en la sopa hirviendo para pocharlo y una vez cocido se lo pone en el plato sopero sobre la sopa caliente luego el otro y encima se adorna con queso parmesano y perejil perejil picado.

Es suficiente un chulco de huevos en el atardecer acompañado con una manzana horneada...

I know vegetarians who eat eggs. Not eating meat does not prevent them from consuming eggs, which are NOT MEAT.

Sorry, I ain't here to argue with you over ovo-vegetarian diet (which technically isn't vegetarian though controversial); but I had objected to the use of #vegan tag for a post that includes animal products like eggs & milk.
Your response terming it as unfair due to your being in a free community is beyond my understanding. Keep doing what you feel right and lemme do what I feel correct. I'm out. All the best!
