Qurator's: Hive Top Chef! | Freshness Overload // Assorted salad

Greetings dear friends, welcome to my blog. Today I am once again joining the weekly contest Qurator's: Hive Top Chef! | Freshness Overload. For this challenge, I made a salad. Besides being very healthy, it was delicious, and all the ingredients were completely fresh. It was perfect for filling up. I've been training for three weeks now, and after my workout, I always have a salad for dinner.

I used ingredients I already had in my fridge: cucumber, tomato, red bell pepper, carrot, beet, onion, and avocado. Although I used a whole avocado in the recipe, I used a few slices for garnish. The avocado was too ripe, and I couldn't chop it as I wanted, but it was still ready to eat. I also used some parsley to garnish and give the salad a green touch; the beet inevitably turned it all red. To add flavor, I made a simple dressing with salt, vinegar, and oil. It was a little, but enough for the amount of salad I prepared. This serving is for two people.

Ingredients


- 80g cucumber
- 45g tomato
- 50g onion
- 6g parsley
- 25g bell pepper
- 1 avocado (200g)
- 50g carrot
- 40g beetroot
- 1 teaspoon salt
- 1 teaspoon white vinegar
- 2 tablespoons soybean oil

Preparation


1.-. We remove the skin and seeds from the cucumber, then wash it and cut it into pieces.

2.-. We remove the skin from the onion, the seeds from the tomato, and wash them along with the red pepper. Then, we cut the onion into rings, and the tomato and pepper into cubes. We add all the ingredients to a bowl.

3.- We remove the skin from the carrot and beet, wash them, and grate them on the finest side of a grater. Then, we add them to the bowl with the already chopped cucumber, tomato, onion, and peppers. Mix.

4.- Prepare the dressing. In a bowl, place the teaspoon of salt, the two teaspoons of oil, and the teaspoon of vinegar. Mix well and then add it to the salad. Mix well until it is coated throughout the salad.

5.- We washed the parsley and chopped it, as well as the avocado to make small slices for garnish. But I can tell you that the avocado was very good, a little soft, yes.

We serve the salad, garnished with parsley and avocado. Simply delicious!.
