Waffle Whimsy: A Flavorful Experience

One thing I have always wished to have a taste of is a waffle. Whenever I watch it on TVs, I’m always salivating, wondering, and taste-bud guessing what a waffle would taste like. I had made attempts to purchase a waffle maker, but then I wasn't getting the square shape, and that ended my waffle dream and ambition.
While I had given up hope of the introduction between my taste buds and the almighty waffle, the universe had something up its sleeve for me.
So back then during my second degree, it so happened that we had this new joint that sold western delicacies, among which were waffles. The waffles come with a giant coke and chicken wings.
I thought it would be a perfect opportunity for me to finally satisfy my cravings. I know it’s weird craving for something you haven’t even tasted once in your life, but then call me the CEO of foodies worldwide.
I did purchase the waffle combo from the food truck, and I as well did regret it because the waffle tasted too rubbery and I could say that it was over mixed. Aside the rubbery and hard texture it tasted like cardboard lol don’t ask me how I knew what cardboard taste like please but best believe the waffle was an abomination and the giant coke??? Poison.
Well if you fancied a sachet colar mixed in room temperature water then the drink could pass as less poisonous. I hated the combo and I regreted the purchase and in order not to experience such again I gave up my quest for waffles.
Or so I thought because recently my sister handed me her waffle maker. I had maid mentioned about ordering online and then she said no need I can have hers.
Fam I was elated to say the least because finally I do not only get to taste it, I also would have the opportunity to try out my hand and tweak the recipe to preference. All of which happened today because what best day to share new recipes with fam if not Sunday when the house is full?
You know, aside the anticipation of how the waffles would turn out especially in terms of flavour; One thing I enjoyed most is having to create my own recipe from existing recipes on the internet.
The ability to add a kick of 9ja with the onion, grinded pepper and sardines made it unique, and worthwhile. Best believe by the time we were done cooking, the waffle was bursting with flavours.
So, with everything said and done, lets get right to my own style of waffle recipe. As a Nigerian, I brought in a little nativity and that you would see below:
STEP 1
INGREDIENT
6 Cup of flour
2 tablespoon baking powder
1 cup of sugar
125g melted Butter
Half a jar of Whey (got this from the yogurt I made)
A tablespoon of Cameron pepper (Yellow Lantern Chilli)
250g of liquid milk
3 eggs
Sardine
A small bulb of onion
A teaspoon of salt

This gave me about 16 pieces of waffles
STEP 2
PROCEDURE

First thing I did was to crack the eggs, then I separated the egg white from the egg yoke as seen in the big green bowl and aluminum small bowl
Next was to mix the dry ingredients together which comprised of flour, baking powder, salt, grinded pepper, and sugar.
I combined both the wet and dry ingredients by incorporating the egg yoke, whey, milk and melted butter into the flour mixture.

At this point all the ingredients were mixed in a fold in pattern to avoid over mixing. After which I added the sliced onions and then proceeded to whisking the egg white till it formed a stiff peak as seen in the photo.

I proceeded to adding the whisked egg white to the batter and folded in again.

Since not everyone might like the flavour of sardines, I separated the batter. I added more melted butter to one part and sardines plus its oil to the other part, and then folded both batter in sequentially.

I proceeded to greasing the preheated waffle maker after which I added four scoops of batter and proceeded to baking. See pictures below;
I opened to check after 3 minutes of cooking, then closed and left it to cook for another 3 & 1/2 minutes. I needed it to be brown and crunchy.
And guys!!!!!! This is what we have.

STEP 3
SERVING
I paired these delicious waffles with a homemade peanut butter, Omelette, plus hot chocolate beverage.

If you hate sour and tangy, please replace the whey with water or more milk. The batter shouldn’t be runny nor too thick. It should just be spreadable.
